Pumpkin soup with chorizo

Our Autumn recipe is for tasty soup, guarenteed to warm you up.  It makes 4 portions.

Ingredients:

Pumpkin, diced - 600 gms

Carrot, sliced - 2 medium

Onion, sliced - 250 gms

Thyme - 1 sprig, chopped

Parsley - 2 sprigs, chopped

Chorizo sausage - 2 small ones, sliced

Olive oil

Salt and pepper to taste

Water - 600 ml

Method:

Heat oil in saucepan, add onions and soften them for 5 minutes with medium heat.  Add the pumpkin thyme and parsley, adjust seasoning, cover and bring to the boil.  Simmer over a low heat until the pumpkin and carrot are soft.

Liquidize to a smooth consistency and check for seasoning.  Bring back to the boil and add the sliced chorizo.  Best served with warmed sour dough bread and butter.
